Pressed from our inaugural harvest in November 2026, this collection is an intimate study in time and terroir. We bottle the oil at source, rushing it from the stone mills to your table in just six weeks.
Housed in a gift box alongside a single, stainless steel shot glass. Arriving by the 15th of December, in time for the winter gatherings. To be shared, gifted, or quietly kept.
The Process
Our harvest times are chosen by our agricultural experts, guided by timing, soil and colour. Olives are picked at the right time to ensure taste, heat stability and maximum health benefits. Then our sommeliers, experts in complex tastes and the demands of the table, perfect the taste. Cold pressing, and lab testing means we know exactly what's in our oil and careful bottling preserves the special qualities of the olives.
